Chicken and Mushroom
Cheese Bake

1 package boneless chicken breasts (about 4 breasts)
1 can chicken broth
1 jar sliced mushrooms
1 – 2 packages Muenster cheese
Lemon-pepper marinade
1 egg, slightly beaten
Italian flavored breadcrumbs
Olive oil for frying
Remove any fat from chicken breasts. Cut chicken
into bite-sized chunks. Place chicken in marinade combined with one egg. Marinade according to directions.
Place bread crumbs in a large bowl. Preheat olive
oil to medium high heat in a large skillet. Dip chicken pieces into breadcrumbs
and fry until golden brown on all sides. Remove and place on paper towels to
absorb the fat.
Add brown chicken chunks into a roasting pan. Add
can of chicken broth, drained mushrooms and cheese. Toss until well mixed. Cover and bake at 350 for 1 hour.
